At Castlemine Farm we believe in the philosophy of good breeds, good feed and good welfare. We rear predominantly heifer beef under 24 months of age. The main breeds we select are Hereford, Angus, Charolais and Limonsin.

 

However, more important to the breed we feel a slow maturing life cycle with an exclusive grass-based diet is the key to flavour and texture.

 

We dry-Age our meat on the bone (as standard) for a minimum of 14 days or longer to intensify the flavour.
