
Castlemine Farm has been producing beef and lamb for 5 generations.
We specialise in dry aged heifer beef and lamb reared in the limestone region of Roscommon.
Our wholesale beef and lamb products are sourced from this region that is famous for its output of high quality produce. We source locally and from our own farm for the best tasting, consistent meat possible.
We are members of Good Food Ireland and have won Bridgestone awards for 2010 and 2011. Our passion is producing and sourcing the best Ireland has to offer and taking control of the food chain that is embedded in our culture and traditions.
At Castlemine Farm we believe in the philosophy of good breeds, good feed and good welfare. We choose only heifer beef under 24 months of age. The main breeds we select are Hereford, Angus, Charolais and Limonsin. However, more important to the breed we feel a slow maturing life cycle with an exclusive grass-based diet is the key to flavour and texture. We also dry-Age our meat on the bone (as standard) for a minimum of 10-14 days and longer on request, to intensify the flavour. .
Roscommon has the highest output of high quality lamb in Europe. It's an extremely important industry in which farmers take a lot of pride in their produce. We select female lambs and dry age them on the bone for a minimum of 7 days. The main breeds used are Suffolk and texel's. We only select 100% grass fed animals which like beef gives us the rich taste and texture you expect from the lush limestone region from which they derive
MOn Castlemine Farm we have a herd of traditional breed, free-range pigs. Breeds include sadllebacks, tamworths and large whites. These pigs are slow grown outdoors to provide a flavour and texture you with notice to be different. Our products from these pigs include fresh pork, traditional cured bacon and hams and our signature sausages, which are our most popular product. Our biggest feed back on our free range pig products is "it's like what we use to get years ago".

Orders should be placed on a Monday or Tuesday for deliver Thursday or Friday of the same week. We order 21 or 28 days dry aged produce then extra time of 1 to 2 weeks must be allowed.
Due to the nature of the industry prices may vary from time to time and it is advised to check current prices at the time of ordering. We will notify customers of any significant price changes where it is relevant to the customer.
Delivery times b>are generally from Wednesday to Friday depending on the area. Please call or check our website for more details. Smaller deliveries can be arranged by express courier overnight.
Payment is by Cash on Delivery (COD) or direct debit (DD) only. All good remain the property of Castlemine Farm until paid for in full. Credit limits will apply. A 2% discount is offered to customers wishing to pay by COD.
Castlemine Farm is fully compliant with EU regulations and operates a HACCP system. Inspection of HACCP details or our premises can be arranged. We also operate in house quality control systems to ensure consistency of our products.
Farm tours can be arranged for restaurants staff and owners. These tours are design ed to educate people on our rearing systems and how we strive for quality and consistency throughout the year. Tours are arranged by prior arrangement and are free of charge to existing customers.
